The cinnamon tree, the tree from which we get our spice cinnamon, is a small evergreen tree that originally comes from Sri Lanka. Today, it is indeed Sri Lanka that produces the majority of the world's cinnamon spice.
The leaves are oblong and dark green, with distinct, light-colored leaf veins. The flowers are small and greenish. The fruits are purple and contain a single seed.
The spice, cinnamon, is harvested from the tree when it is a few years old, and one can continue to harvest for many, many years. Small side branches are removed from the tree and the outer bark is stripped away. The inner bark is then carefully removed and dried in the shade and subsequently in the dark. It is this inner bark that becomes cinnamon.
There are a number of other Cinnamomum species whose bark is also used and referred to as cinnamon. However, it is Cinnamomum verum that is considered the true and best one.
