FROST TOLERANT
- Latin name: Zanthoxylum armatum
- Danish names: Himalayan pepper tree, thorny toothbrush tree
- English names: Winged prickly ash, Nepal pepper, toothache tree
Zanthoxylum armatum is an aromatic, deciduous small tree or shrub native to the Himalayan region, where it grows on mountain slopes and in open woodland from Pakistan to Southern China. It belongs to the same genus as the Japanese pepper, Zanthoxylum piperitum, but differs by being more robust, stronger in flavor, and with more distinct thorns on both branches and leaf stalks.
The leaves are light green and pinnate, with a fresh citrus scent when rubbed. In the spring, small yellow-green flowers develop, later followed by reddish-brown fruits that open upon maturity to reveal shiny black seeds. The dried fruit husks constitute the well-known Sichuan or Himalayan pepper – known for its unique, tingling, and slightly citrusy flavor.
Cultivation and requirements:
Zanthoxylum armatum thrives best in full sun to light partial shade and prefers well-drained but moisture-retentive soil. It is more cold-tolerant than many tropical species and can withstand light frost in Denmark (down to approx. –10 °C), especially when sheltered. In cold regions, it is recommended to overwinter it frost-free or provide shelter and root protection.
The plant grows at a moderate speed and can eventually reach a height of 2–4 meters. It tolerates pruning and is suitable as a solitary plant, in large pots, or as part of an herb garden with an exotic touch.
Cultivation from seeds:
The seeds are sown in a well-drained soil mixture and covered lightly. To break dormancy, they can be stratified—placed in damp sand at approx. 5 °C for 1–2 months before sowing. However, we have already stratified the seeds for you. Germination typically occurs after 4–8 weeks at 20–25 °C. The young plants quickly develop thorns and can be planted out once the risk of frost is over.
Utility:
Both the fruits and leaves of Zanthoxylum armatum are used in cooking and traditional medicine. The dried fruits are used as a spice in Sichuan and Nepalese cuisine, where they provide the characteristic, slightly numbing, and citrusy flavor. In Asia, the plant's branches are also used as natural toothbrushes—hence the name toothache tree.
Compared to Zanthoxylum piperitum, Z. armatum has a more powerful aroma, coarser growth, and larger thorns, making it both more decorative and more intense in flavor.
Zanthoxylum armatum is a beautiful and useful shrub for anyone wanting a hardy and exotic spice plant—a Himalayan pepper tree that combines ornamental value, scent, and flavor in one and the same plant.
